In this helpful resource, I list the most stable, meaning less oxidative, cooking oils at the top in blue labeled “All Purpose,” down to the most oxidative labeled “Do Not Eat” in red at the bottom.
At the top of the stability ladder, we’ve got animal fats – they’re like the chill Zen masters of the culinary world, resisting oxidation.
In the middle, we’ve got good ol’ olive oil – a solid choice for cooking without going overboard on the oxidation scale.

The collective oversight of emptied shelves and scarcities during that time points to a forgotten wake-up call. His personal encounter with the impact of the shortage, left to eat only artichokes, unveiled our dependency on distant industrial farms.
Anticipating future crises, he chose self-sufficiency, leaving my medical career to immerse myself in a local sustainable farm apprenticeship. Subsisting exclusively on the farm’s produce and aligning his daily routine with Kundalini Yoga, he synchronized with nature’s rhythms.
Now armed with this insight, his mission is to share the acquired wisdom, emphasizing the imperative of embracing local food and fortifying the gaps in our vulnerable food supply chain.
